Bien Viaje

Me and the good hubby, TL, are headed off this afternoon for a little R&R in San Diego. It seems we are having an Anniversary manana.........33 years!

Nope, we're not staying here-we did that on the big THREE-OH anniversary but we're staying across the street at another historic mansion-turned-hotel.

Our only disappointment is that the temple is closed-Dang.....Oh well, I think there's some pretty good shopping on Coronado Island......(teehee)

Haystacks, there are several versions... here is one:

Haystacks


2 tablespoons butter

1/2 c. chopped onion

1 (26-ounce) can cream of chicken soup

6 cups cooked and diced chicken

2 cups sour cream

8 cups cooked rice

1 (9.5 oz) can chow mein noodles

2 (20 oz) can pineapple tidbits, drained

2 (15 oz) cans mandarin oranges, drained

1 c. sliced green onions

1 c. chopped celery

1 c. chopped red pepper

2 c. frozen peas, thawed

1 c. flaked coconut

1/2 c. slivered almonds, toasted



In a saucepan, saute butter and onions for about 3 minutes. Add chicken soup and warm over medium heat. Stir in chicken and sour cream and cook until hot, but do not boil. Place on the serving table in a Crock-pot or chafing dish to keep warm. Place rice and toppings in separate bowls on buffet table. Guests build their own haystacks by placing rice on a plate, then spooning chicken mixture and toppings as desired. Makes about 12 servings.
